Our boneless crowns offer an alternative to a Whole Turkey. The ideal choice if you are looking for convenience or cooking for large numbers. Easy to cook and carve with no waste. Exceptionally moist and succulent when using the roasting kit provided
Cooking Guidelines:
1. Remove the turkey from the vacuum packaging
2. Season the turkey with salt, pepper and any spices of your choice.
3. Baste the entire turkey with butter or olive oil (both skin and underside)
4. Place turkey on aluminium baking tray provided with skin side up.
5. Layer streaky bacon to skin side of the turkey (not essential)
6. Insert any fruits of your choice inside the tray (example half orange or lemon)
7. Add approximately 150ml of water to the base of the tray.
8. Insert the tray into the roasting bag provided.
9. Tie the open end of the bag securely with the string provided. Tie the bag near the neck allowing room for expansion throughout the cooking process.
10. Place the turkey in a pre-heated oven at 160°C: Gas mark 3. Roast for 1 hours and 35 minutes.
11. For a crispy skin and golden finish cut open the top of the bag for last 10 minutes of the cooking time.
12. Insert probe into the thickest part of the joint, and ensure core temperature reads above 74°C.
13. Remove from oven and allow to rest for 15 to 20 minutes before carving. (Alternatively allow the turkey to cool completely ideally in a cool place before chilling overnight. The joint can then be carved cold, and the slices layered onto a baking tray and re-heated. Reheating the slices and covering with the gelatin from the cooking bag gives a good result)

Our topside roast comes boneless and tied providing an ideal roast that is easy to cook and carve. There is very little fat content through the meat and it is considered one of the more healthy beef joints. Our butchers can tie on some basting fat to the outside surface in order to prevent drying out when cooking. Topside suits a long slow cook and should be well rested before carving.
Cooking Guidelines:
REMOVE FROM VACUUM PACK PRIOR TO COOKING
Prepare & season your joint as you require.
Cover in olive oil or butter. Brown all outside edges on a hot pan
Pre heat oven to 180°C or Gas 4
Insert the Beef into your oven on a roasting tray. Cover the tray loosely with tinfoil and roast for:
RARE: 1hour 25mins MEDIUM: 1hour 30 mins WELL DONE: 1hour 40mins
For best results use a thermometer. 51C for rare, 63C for medium, 71C Well Done

Serve White and Rose Wines refrigerated chilled.
Store Red Wine in a cool dry place. Bring to room temperature before drinking. Red wine also benefits from being opened hours before consumption.
