These bone in chops are often referred to as single loin chops in certain parts of the country. The cutlets are cut from the rack of lamb and consist of the eye of the loin attached to the rib bone with a small rim of white fat on the upper side. Very tender with a fine texture these chops are bursting with flavour when seasoned and simply grilled.
