Rolled Turkey Fillet

1kg serves

An alternative to a Whole Turkey, this is he ideal choice if you are looking for convenience or cooking for large numbers. We remove the fillet from the crown before tying to provide a tender joint that is easy to cook and carve with no waste. Exceptionally moist and succulent especially when using with the Henderson Roasting Kit.

Cooking Guidelines:
 REMOVE FROM VACUUM PACK PRIOR TO COOKING
 Pre-heat oven to 180°C or Gas 5.
 Season and baste with butter or olive oil and then add any herbs, fruits and/or stuffings of your choice.
 Put the turkey in a roasting tin, breast-side up, and roast for 60 mins, or until the internal temperature reaches 74°C.
 The turkey will continue to cook, and the temperature will rise while it rests. Juices should run clear when skewered with a fork or knife.
 Allow the turkey to rest for at least 20 mins before carving.

Beef Roasting Joint

1kg serves 4+

Our topside roast comes boneless and tied providing an ideal roast that is easy to cook and carve. There is very little fat content through the meat and it is considered one of the more healthy beef joints. Our butchers can tie on some basting fat to the outside surface in order to prevent drying out when cooking. Topside suits a long slow cook and should be well rested before carving.

Cooking Guidelines:
 REMOVE FROM VACUUM PACK PRIOR TO COOKING
 Prepare & season your joint as you require.
 Cover in olive oil or butter. Brown all outside edges on a hot pan
 Pre heat oven to 180°C or Gas 4
 Insert the Beef into your oven on a roasting tray. Cover the tray loosely with tinfoil and roast for:
RARE: 1hour MEDIUM: 1hour 15 mins WELL DONE: 1hour 30mins

For best results use a thermometer. 51C for rare, 63C for medium, 71C Well Done

Handmade Pork Stuffing

450g

All our stuffings are made by hand on the premises to our original family recipe using only prime meats and blended with finest ingredients. You can add your own flavours and spices to the stuffing and fill the cavity of the bird or even roll into balls, roast and serve alongside.
Cooking Guidelines:
 Pre heat oven to 180°C
 Remove meat from plastic sleeve
 Place on baking tray
 Cook stuffing for approx. 30-45 minutes or until golden-brown on top.

Extra Lean Handmade Pork Chipolatas

Enjoy our handmade pork chipolata’s with your festive feast or wrap in our Ayrshire cured streaky bacon to make your own Pigs n Blankets. GLUTEN FREE
Cooking Guidelines:
 Pre heat oven to 180°C.
 Remove all packaging and place chipolatas on a baking tray in the centre of the oven.
 Cook for 20 to 25 minutes.
 Turn occasionally and ensure they have an even golden-brown colour.

Home Cured Gammon Joint

Cooking Guidelines:
 REMOVE FROM VACUUM PACK PRIOR TO COOKING
 Prepare & season your joint as you require.
 Cover in olive oil or butter. Brown all outside edges on a hot pan
 Pre heat oven to 220°C or Gas 7
 Insert the Gammon into your oven on a roasting tray. Cover the tray loosely with tinfoil.
 Roast at 220°C / Gas Mark 7 for first 10 minutes before turning down to 180C/Gas mark 4 for 1hour 10mins.
