Our pork is sourced from farmers in the Scottish borders who operate to the highest of welfare standards. We select British Landrace crossed with other native breeds to provide pork with great flavour but without excessive fat.
Tremendous flavour from this economical cut that makes an ideal slow roast. Carefully prepared by our butchers the bones and excess fat are removed before being rolled and tied. This maintains the shape whilst cooking and makes carving easy. Cook the joint low and slow in liquid with root vegetables for best results. Alternatively request for our butchers to dice and use for a casserole. Also the ideal choice for Pulled Pork. We would recommend serving with our home made Sticky Orange & Honey sauce prepared by Tony our chef!
